Allow me to introduce you to the insanely delicious grated egg toast that has recently taken the culinary world by storm. If you haven’t heard of it yet, you have been seriously missing out.

While avocado toast isn’t anything new (hello Smashed Avocado Toast), topping it off with grated egg just might be. This Viral Grated Egg Toast takes the classic avocado toast to the next level by topping it off with a grated hard-boiled egg and spicy mayo.

The result? An intensely flavorful, satisfying, and surprisingly simple toast recipe that is perfect for busy mornings or quick and easy lunches. You’re welcome.

If you’re anything like me, avocado toast is a staple dish in your diet. Whether I need a portable breakfast I can eat in the car or a savory and filling snack, a slice of avocado toast gets the job done.

Of course, this Viral Grated Egg Toast isn’t just your average avocado toast. Bursting with flavor, texture, and tons of good-for-you ingredients, think of this fancy egg toast as avocado toast’s older, cooler cousin.

What You’ll Need

One of the reasons avocado toast is so iconic is because it is so darn simple. The same applies here. All you need to make Viral Grated Egg Toast are a few key ingredients:

  • Avocado. For this dish, you’ll need either 1 small, ripe avocado or ½ of a large one. Typically, I aim for about 2 tablespoons of avocado per slice.
  • Eggs. Use either 1 or 2 hard-boiled eggs, depending on how eggy you’d like your toast to be. Make sure to refrigerate your boiled eggs beforehand, as colder eggs are easier to grate.
  • Spicy Mayonnaise. To make spicy mayo, I use 2 teaspoons of Vegenaise or mayonnaise and ½ to 1 teaspoon of sriracha. Use more sriracha for a spicier sauce and less sriracha for a milder sauce.
  • Salt and pepper. These are the only spices you need! This just helps to enhance the naturally delicious flavors of the ingredients.
  • Bread. You can use whichever bread is your favorite to toast. However, I recommend choosing something sturdy, like ciabatta or sourdough.

How To Make Grated Egg Toast

Grated egg avocado toast looks way more complicated than it is. This is one of those dishes that is guaranteed to impress, yet it is one of the easiest breakfast recipes you can make. Just follow these simple steps:

  1. In a small bowl, prepare your spicy mayo by combining 2 parts Vegenaise or mayonnaise to 1 part sriracha. Then, set aside.
  2. Lightly toast the bread in a toaster or toaster oven. While the bread is toasting, thinly slice your avocado.
  3. Once the bread is toasted, spread the spicy mayo evenly on each slice. Then, spread the avocado slices atop the mayo.
  4. Grate the hard-boiled egg over the avocado. Then, top everything off with a pinch of salt and pepper. Voila!

While this recipe is super easy to make, there are a few tricks to make it even easier. Here are some tips to keep in mind when making this Viral Grated Egg Toast:

  • Smash your avocado. Prefer smashed avocado over sliced? Go for it!
  • Great for entertaining. If you’re entertaining and/or looking to feed a lot of mouths, I recommend making mini versions with a sliced French baguette and serving this dish as a healthy appetizer or snack at your next brunch.
  • Go vegan. You can make a vegan version of this dish by leaving out the grated egg or swapping it for scrambled tofu instead.
  • Add garlic. For an extra burst of flavor, rub a peeled garlic clove over the top of your bread before adding the spicy mayo or sprinkling garlic powder over the toast.

Avocado toast is the ideal base dish for customizations. As I said earlier, there are a ton of variations and toppings available that will easily enhance the dish. Here are some of the best avocado toast topping ideas to try out:

  • Veggies. To up the flavor profile (and nutritional content!), add some fresh vegetables to your avocado toast. I love adding sliced tomatoes, radishes, or jalapenos to this dish. (If you want even more flavor, try pickling them.)
  • Cheese. While you’ve got the grater out, you might as well add some freshly grated cheese to your toast. Mozzarella, parmesan, and goat cheese would all taste amazing.
  • Protein. Craving a bit more protein? Try adding turkey bacon or sausage patties to the toast.
  • Fresh herbs. I am a sucker for adding fresh herbs to my avocado toast. Chopped basil, cilantro, dill, and parsley all pair well with avocado and would taste delicious here.
  • Spice. For my spice lovers out there, a sprinkle of red pepper flakes or cayenne pepper will take the heat up a notch.

Tips For the Best Avocado Toast

When you’re looking for a quick bite to satisfy your appetite, you can’t go wrong with avocado toast. It is easy, delicious, and oh-so-good for you.

That being said, here are some tips for making the best avocado toast, every time:

  • Use ripe avocados. Now, this might seem like a no-brainer, but it is so important to use avocados that are just the right amount of ripe. I like using ripe (but not overly-ripe) Hass avocados. When picking them out, make sure you’re able to gently squeeze them, but avoid any excessively mushy avocados. (You’ll know when mushy becomes too mushy.)
  • Use good bread (and toast it well). Sturdy, fresh bread like ciabatta or sourdough is going to be your best friend. Well-toasted bread (think: golden) is going to provide a crunchy base that contrasts deliciously with the creaminess of the avocado.
  • Don’t forget salt and pepper. While this dish is ultra flavorful on its own, salt and pepper are what enhance the flavors to take it over the top.

How do you grate an egg easily?

Grating an egg sounds far more complicated than it is. To easily grate your eggs, use a hard-boiled egg that has been chilled in the refrigerator. (Cold eggs are a lot easier to grate than warm or room temperature eggs.)

Then, use your grater and grate the egg as you would a block of cheese, holding it firmly and being careful not to snag a finger.

How do you make the best hard-boiled eggs?

Hard-boiled eggs can be tricky, but once you get the hang of them, they are ideal for a whole host of dishes.

To perfectly hard-boil your eggs, bring a pot of water to a boil. Carefully place your eggs in the water and let them boil for about 30 seconds. After 30 seconds, turn the burner to low and let the eggs simmer for 13 minutes.
