While avocado toast is nothing new, adding a grated egg on top takes it to a whole new level.

This Grated Egg Toast elevates the classic avocado toast by combining it with a grated hard-boiled egg and spicy mayo.

If you’re anything like me, avocado toast is a go-to dish in your diet. Whether I need a portable breakfast I can eat on the go or a savory and filling snack, a slice of avocado toast does the trick.

But this Viral Grated Egg Toast is no ordinary avocado toast. Bursting with flavor, texture, and nutritious ingredients, think of it as avocado toast’s older, cooler cousin.

What You’ll Need

One of the reasons avocado toast is so iconic is because it is so darn simple. The same applies here. All you need to make Viral Grated Egg Toast are a few key ingredients:

  • Avocado. For this dish, you’ll need either 1 small, ripe avocado or ½ of a large one. Typically, I aim for about 2 tablespoons of avocado per slice.
  • Eggs. Use either 1 or 2 hard-boiled eggs, depending on how eggy you’d like your toast to be. Make sure to refrigerate your boiled eggs beforehand, as colder eggs are easier to grate.
  • Spicy Mayonnaise. To make spicy mayo, I use 2 teaspoons of Vegenaise or mayonnaise and ½ to 1 teaspoon of sriracha. Use more sriracha for a spicier sauce and less sriracha for a milder sauce.
  • Salt and pepper. These are the only spices you need! This just helps to enhance the naturally delicious flavors of the ingredients.
  • Bread. You can use whichever bread is your favorite to toast. However, I recommend choosing something sturdy, like ciabatta or sourdough.

How To Make Grated Egg Toast

Grated egg avocado toast looks way more complicated than it is. This is one of those dishes that is guaranteed to impress, yet it is one of the easiest breakfast recipes you can make. Just follow these simple steps:

  1. In a small bowl, prepare your spicy mayo by combining 2 parts Vegenaise or mayonnaise to 1 part sriracha. Then, set aside.
  2. Lightly toast the bread in a toaster or toaster oven. While the bread is toasting, thinly slice your avocado.
  3. Once the bread is toasted, spread the spicy mayo evenly on each slice. Then, spread the avocado slices atop the mayo.
  4. Grate the hard-boiled egg over the avocado. Then, top everything off with a pinch of salt and pepper. Voila!

Grated Egg Toast Tips

While this recipe is super easy to make, there are a few tricks to make it even easier. Here are some tips to keep in mind when making this Viral Grated Egg Toast:

  • Smash your avocado. Prefer smashed avocado over sliced? Go for it!
  • Add garlic. For an extra burst of flavor, rub a peeled garlic clove over the top of your bread before adding the spicy mayo or sprinkling garlic powder over the toast.
  • Use ripe avocados. Now, this might seem like a no-brainer, but it is so important to use avocados that are just the right amount of ripe. I like using ripe (but not overly-ripe) Hass avocados. When picking them out, make sure you’re able to gently squeeze them, but avoid any excessively mushy avocados. (You’ll know when mushy becomes too mushy.)
  • Use good bread (and toast it well). Sturdy, fresh bread like ciabatta or sourdough is going to be your best friend. Well-toasted bread (think: golden) is going to provide a crunchy base that contrasts deliciously with the creaminess of the avocado.
  • Don’t forget salt and pepper. While this dish is ultra flavorful on its own, salt and pepper are what enhance the flavors to take it over the top.

How do you grate an egg easily? To easily grate your eggs, use a hard-boiled egg that has been chilled in the refrigerator. (Cold eggs are a lot easier to grate than warm or room-temperature eggs.)
