Easter Brunch Recipe ideas

Gathering with loved ones for a delightful brunch is one of my favorite things to do in the spring, so today I’m sharing my favorite Easter brunch recipe ideas.

When planning a brunch like Easter brunch, consider how many people will be joining you and how formal you want the occasion to feel. I personally love a semi-casual buffet-style brunch with elevated recipes.

Easter Brunch Menu Formula

Here’s how I think about how much food to make for brunch with this year’s Easter brunch menu (recipes below):

  • 1-2 snacking items: deviled eggs and smoked salmon toasts
  • 1-2 main dishes: spring vegetable frittata and sandwich plate
  • 2-3 sides: oven-roasted asparagus, fruit salad
  • 1-2 desserts: carrot cake loaf
  • beverage station: a pitcher of water with lemon slices, coffee, and mimosas

Whether you’re celebrating Easter or simply enjoying the beauty of spring, these brunch recipe ideas are sure to impress and satisfy!

Easter Brunch Menu Ideas

Using the formula above, use these ideas to plan your perfect Easter brunch menu. I would not make all of these, this list is meant to help you plan and get your started:

1. Deviled Eggs

A classic for a reason, deviled eggs are a must-have at any brunch table, especially Easter Brunch!

2. Smoked Salmon Toasts

Elevate your brunch spread with elegant smoked salmon toasts.

Toast whole-grain or sourdough bread, then add a creamy base of one of the following: herbed cream cheese, avocado, or labneh (lebne). Layer thinly sliced smoked salmon on top. Garnish with capers, fresh dill, (perhaps some red onion or chives), freshly ground black pepper, and a squeeze of lemon for a burst of flavor. These toasts are not only visually stunning but also packed with healthy omega-3 fatty acids, making them a nutritious and delicious choice for your Easter celebration.

Smoked salmon on cucumber slices is another great option.

3. Spring Vegetable Frittata

Celebrate the bounty of spring with a colorful frittata loaded with seasonal vegetables like asparagus, spinach, and leeks. Whisk together eggs, a splash of milk, and some grated Parmesan cheese, then pour it over the sautéed veggies in a skillet. Bake at 370°F until fluffy and golden. It’s a beautiful and nutritious centerpiece for your brunch table.

4. Strata

A strata is like a savory bread pudding, and it’s a fantastic way to feed a crowd.

To make a strata, layer day-old bakery bread cut into 1-to-2-inch peices, sautéed vegetables, and your choice of cheese in baking dish, then pour over a mixture of whisked eggs and milk. Let it soak overnight, covered in the refrigerator, and in the morning, bake it at 350°F to golden perfection. It’s a one-dish wonder that’s as easy as it is delicious.

5. Sandwich Plate

Who doesn’t love a good sandwich? I like to add a sandwich platter when entertaining larger crowds and especially when kids come over so everyone can make a little snack just the way they like it.

Create a sandwich platter with a variety of rolls and/or whole-grain bread, lean proteins like turkey or chicken, a few sliced cheeses, and an array of fresh veggies. Add some spreads like hummus or avocado for a healthy touch. It’s a customizable option that will please everyone at the table.

6. Oven-Roasted Asparagus

Spring is the perfect time for oven-roasted asparagus. It’s also easy to scale and great to serve a crowd.

Toss the spears with a little olive oil, salt, and pepper, then roast until tender and slightly caramelized, about 10 minutes. Finish with a squeeze of lemon for a bright and flavorful side dish.

7. Melon Wrapped in Prosciutto

For a touch of elegance, serve slices of ripe melon wrapped in thin slices of prosciutto. The sweet melon paired with the salty prosciutto is a classic elevated combination. It’s a simple yet sophisticated addition to your Easter brunch spread.

8. Fruit Salad

No brunch is complete without a vibrant fruit salad. This Rainbow Fruit Salad is one of my favorites.

Mix together seasonal fruits like strawberries, blueberries, and kiwi for a colorful and refreshing side. For a special touch, toss the fruit in a light honey-lime dressing – it’s a simple way to elevate the natural sweetness of the fruit.

9. Berry and Yogurt Parfaits

For a lighter option, layer Greek yogurt, granola, and a mix of fresh berries in clear glasses. These parfaits not only taste delicious but also add a pop of color to your brunch table. Drizzle with honey or a touch of maple syrup for added sweetness.

10. Carrot Cake Loaf
