How To Make Herb Lemon Rice

  1. Cook the rice: In a medium saucepan, combine the water and 1 teaspoon salt. Bring to a boil over medium-high heat. Add rice and then reduce heat to low, cover, and simmer until the rice is tender and the water is absorbed, 15 to 18 minutes.
  2. Let it sit: Remove from heat and let sit, covered, for 5 minutes.
  3. Fluff and flavor: Fluff the rice with a fork. Stir in the olive oil, lemon zest, and lemon juice. Gently fold in the parsley and mint. Season with salt and black pepper to taste.
  4. Serve: Serve warm or at room temperature as a light, herby side dish.

  • 1 3/4 cups water
  • 1 teaspoon kosher salt, plus more to taste
  • 1 Tablespoon extra-virgin olive oil
  • Zest of 1 lemon
  • 2 Tablespoons fresh lemon juice (from about 1/2 lemon)
  • 1/4 cup chopped fresh parsley
  • 2 Tablespoons chopped fresh mint
  • Freshly ground black pepper, to taste

Instructions

  1. Combine the water and salt in a medium saucepan. Bring to a boil over medium-high heat.
