Description
Herb Lemon Rice is bright, fresh, and incredibly simple, this side dish pairs beautifully with grilled fish, roasted vegetables, or any Mediterranean-style meal. Lemon zest and fresh herbs bring ordinary rice to life in the best way.
Ingredients

- 1 cup long-grain white rice (such as jasmine or basmati)
- 1 3/4 cups water
- 1 teaspoon kosher salt, plus more to taste
- 1 Tablespoon extra-virgin olive oil
- Zest of 1 lemon
- 2 Tablespoons fresh lemon juice (from about 1/2 lemon)
- 1/4 cup chopped fresh parsley
- 2 Tablespoons chopped fresh mint
- Freshly ground black pepper, to taste
Instructions
- Combine the water and salt in a medium saucepan. Bring to a boil over medium-high heat.
- Add the rice. Reduce heat to low, cover, and simmer for 15–18 minutes, or until water is absorbed and rice is tender.
- Remove from heat and let sit, covered, for 5 minutes.
- Fluff with a fork, then stir in olive oil, lemon zest, and lemon juice.
- Fold in parsley and mint. Season with salt and pepper to taste.
- Serve warm or at room temperature.

Storage: Refrigerate any leftover Herb Lemon Rice in an airtight container for up to 4 days.
