Description

Herb Lemon Rice is bright, fresh, and incredibly simple, this side dish pairs beautifully with grilled fish, roasted vegetables, or any Mediterranean-style meal. Lemon zest and fresh herbs bring ordinary rice to life in the best way.


Ingredients

  • 1 cup long-grain white rice (such as jasmine or basmati)
  • 1 3/4 cups water
  • 1 teaspoon kosher salt, plus more to taste
  • 1 Tablespoon extra-virgin olive oil
  • Zest of 1 lemon
  • 2 Tablespoons fresh lemon juice (from about 1/2 lemon)
  • 1/4 cup chopped fresh parsley
  • 2 Tablespoons chopped fresh mint
  • Freshly ground black pepper, to taste

Instructions

  1. Combine the water and salt in a medium saucepan. Bring to a boil over medium-high heat.
  2. Add the rice. Reduce heat to low, cover, and simmer for 15–18 minutes, or until water is absorbed and rice is tender.
  3. Remove from heat and let sit, covered, for 5 minutes.
  4. Fluff with a fork, then stir in olive oil, lemon zest, and lemon juice.
  5. Fold in parsley and mint. Season with salt and pepper to taste.
  6. Serve warm or at room temperature.

Notes

Storage: Refrigerate any leftover Herb Lemon Rice in an airtight container for up to 4 days.
