Ground turkey recipes can be some of the most delicious and healthy recipes in your rotation, but there are some nuances to getting them right!

The best ground turkey recipes all do the same thing: they put fat, moisture, and real seasoning back into a meat that is naturally very lean.

Get that right and ground turkey is genuinely delicious. Get it wrong and you end up with the gray, crumbly, faintly sad version that gave turkey its reputation in the first place. Below are the top ground turkey recipes I make on repeat, plus exactly how to cook it so it never dries out on you again.

I have been writing recipes for 15+ years, and ground turkey is one of the few ingredients where technique matters more than the recipe. Read the section below before you cook, and every recipe on this page gets better.

Why Ground Turkey Is Worth Keeping in Your Rotation

  • High Protein: It is lean and legitimately high in protein. A 4-ounce serving of 93% lean ground turkey has roughly 22 grams of protein and about 2.5 grams of saturated fat, which is less than a third of what you get in the same amount of 80/20 ground beef.
  • Make It Taste Like Anything: Ground turkey is a blank canvas. Turkey has a mild flavor that takes on whatever you season it with, which is why the exact same pound works for taco night, a pot of chili, or burgers on the grill.
  • It’s Fast: Three of the four recipes below are on the table in 30 minutes or less.
  • Versatile: It freezes beautifully, raw or cooked. A pound of ground turkey in the freezer is a dinner you have already half solved.

How to Cook Ground Turkey So It Isn’t Dry

This is the part every other roundup skips, and it is the whole ballgame. Here is what actually works:

  1. Buy 93% lean, not 99%. This is the single biggest fix and it happens at the grocery store, before you cook anything. The 99% fat-free version is almost entirely white breast meat with nothing in it to protect it from drying out. The 93% version includes a little dark meat, which is still very lean but browns better and tastes like food. If 99% is all your store carries, add an extra tablespoon of olive oil or avocado oil to the pan or the mixture.
  2. Get the pan genuinely hot before the turkey goes in. Turkey releases a lot of water. If the pan is only lukewarm, that liquid pools and the meat steams in it instead of browning, which is exactly where the gray, mushy texture comes from. It should sizzle the second it hits the oil pan. If it doesn’t, turn the heat up. (*** If you have time, put your ground turkey on a stack of 2-3 paper towels on a plate before cooking it to get as much of the water out as possible; it will brown more easily.)
  3. Leave it alone for the first two to three minutes in the pan. I know it is hard. Resist the urge to stir. Let one surface sit against the hot pan long enough to take on color, then start breaking it up. That browning is most of your flavor.
  4. Cook your spices in the oil, not on top of the meat. Beef fat carries spices through a dish. Turkey fat is much milder and doesn’t do that as well, so the seasoning tends to sit on the surface instead of melting through. Giving your chili powder, cumin, and garlic a minute in the hot oil before or alongside the turkey makes a bigger difference than adding more of it.
  5. Add something umami. This is my favorite trick and almost nobody does it. A tablespoon of tamari, coconut aminos, sugar-free Worcestershire, or a spoonful of tomato paste gives turkey the savory depth it does not have on its own. I use tamari in my turkey burgers for exactly this reason, and it is why people say they don’t taste like turkey burgers.
  6. Stop at 165°F. Poultry needs to be cooked through, but there is a real difference between cooked through and cooked to death. An instant-read thermometer costs about fifteen dollars and takes the guesswork out entirely, especially with burgers and meatballs.

Which Ground Turkey Should You Buy?

Most stores carry two or three options, labeled by lean-to-fat ratio:

  • 93% lean is the sweet spot and what I call for in almost everything. Enough fat to brown and stay juicy, still very lean.
  • 99% lean (or 99% fat-free) is all white breast meat. It is the leanest option and the driest by a wide margin. Usable, but plan on adding a tablespoon of oil or a sauce to bring some fat back into it.
  • 85% lean shows up at some butcher counters and is closer to ground beef in texture and richness. Great for burgers and meatballs, but might be a little greasy for chili.

You can also usually find dark-meat-only ground turkey at a good meat counter. It is the most flavorful of all of them and worth grabbing if you see it.

The Best Ground Turkey Recipes

Turkey Stuffed Peppers (Easy & Healthy)

The most meal-prep-friendly recipe on this list and the one that reheats the best. Ground turkey, cooked rice, crushed tomatoes, and pepper jack all baked inside bell peppers until the peppers are tender and the cheese on top is browned.
Two things make this version work. First, the crushed tomatoes: they are not just there for flavor, they are the moisture that keeps a lean filling from going dry through a 45-minute bake. Second, no parboiling. Most stuffed pepper recipes have you boil the peppers first, and it is an unnecessary step that costs you a pot and gives you soggier peppers. Covered with foil for the first 30 minutes, then uncovered for the last 10 to 15, they come out perfectly tender.
Optional taco seasoning in the filling is a small addition that takes these somewhere much more interesting. Highly recommend.
Ready in 45 minutes, makes 6 servings.

Ground Turkey Tacos

The fastest weeknight use for a pound of ground turkey, and the one my family asks for most. Onions go in first and cook until soft, then the turkey goes into the same pan with the second tablespoon of oil so it browns properly instead of steaming.
The technique detail that makes these taste like proper taco meat rather than seasoned turkey: after the meat is cooked, you turn the heat down, add the garlic and taco seasoning with a couple tablespoons of water, and let it go another three to five minutes until the whole kitchen smells like it. That short simmer is what pulls the seasoning into the meat. Add a can of tomato sauce at that point if you like your taco filling saucy.
Make a batch of my homemade taco seasoning ahead of time and this becomes a 25-minute dinner with almost no thinking involved. We top ours with shredded lettuce, a little cheese, and pickled red onions.
Ready in 25 minutes, makes 8 tacos.

Awesome Turkey Burger Recipe (That Isn’t Dry)

I worked on this one for over a year, which tells you everything about how easy it is to make a bad turkey burger. The fix turned out to be a combination of things: fresh green onion and real garlic instead of powders, a couple of tablespoons of ketchup for moisture and a little sweetness, and a tablespoon of tamari for umami. No breadcrumbs, so they stay gluten-free.
The step people skip is chilling the patties for at least 15 minutes before they hit the pan. Don’t skip it. It is the difference between a burger that flips cleanly and one that falls apart on the spatula. Cast-iron over medium-high beats the grill here because the flat surface gives you a real crust.
Ready in 35 minutes, makes 4 burgers.

Awesome Ground Turkey Chili Recipe

Thirty minutes, one pot, eight servings, and it freezes for three months. This is the recipe I make when I want to cook once and eat well for days.
Chili is the most forgiving place to use ground turkey because there is so much else going on, but the order still matters. The turkey browns first, then the onion, then the heat comes down and the garlic and spices get a few minutes on their own to bloom before any liquid goes in. Skip that step and you get chili that tastes flat no matter how long you simmer it.
Fire-roasted tomatoes instead of plain diced are a one-word swap on the grocery list that adds a smoky layer you would otherwise have to work for. Kidney beans hold their shape best, and a can of black beans alongside them adds flavor and fiber.
Ready in 30 minutes, makes 8 servings.
