Ingredients:

  • High-Quality Cottage Cheese: Cottage cheese is more than just a versatile dairy product; it’s a nutritional powerhouse. Packed with high-quality protein, it supports muscle repair and growth, which is crucial, especially if you exercise regularly. Including a variant with probiotics is also beneficial, as it helps improve gut health, enhancing both digestion and immune function. I like to look for one that contains live cultures for the probiotics.
  • High-Quality Bread: The foundation of any great toast is, of course, the bread. Opting for a high-quality, bakery or whole-grain bread can elevate this dish from good to great. It adds a delightful crunch and flavor and contributes important dietary fibers, helping to regulate digestion and maintain a feeling of fullness for longer periods.
  • Fresh Tomatoes: Tomatoes are not just about adding a splash of color to your plate; they are a fantastic source of vitamins C and K, potassium, and folate. Slicing them fresh over your toast adds a juicy, refreshing layer that perfectly complements the creamy texture of the cottage cheese.
  • Aged Balsamic Vinegar: A drizzle of aged balsamic vinegar not only enhances the flavor profile but also brings antioxidants to your breakfast, benefiting your heart health and skin vitality.

Description

Start your day with Bruschetta Cottage Cheese Toast! It is packed with 20g of protein, fresh tomatoes, and aged balsamic for a nutritious, flavorful breakfast.


Ingredients

  • 1 slice of good quality bread
  • 2 teaspoons of olive oil
  • Whole tomatoes, sliced (substitute halved grape tomatoes if needed)
  • 1 serving high-quality cottage cheese (preferably with probiotics)
  • Aged balsamic vinegar
  • Salt
  • Optional: Fresh herbs (such as chives or basil)

Instructions

  1. Heat a few teaspoons of olive oil in a pan over medium-high heat.
  2. Swirl the bread in the oil for about 2 minutes, watching closely, until one side is toasty.
  3. Salt the tomato slices and place them on the toast.
