Description

This easy-to-make sesame cucumber salad is the perfect side dish for any meal, and comes together in only 10 minutes! 


Ingredients

Scale
  • 1 large (or 2 small) English (seedless) cucumber, cut into 1-inch pieces (cut in half length-wise, then 1-inch pieces on a diagonal
  • 1.5 tbsp toasted sesame oil
  • 2 tbsp tamari (or low-sodium soy sauce)
  • 1 clove garlic, minced, pressed, or grated
  • 1/2 tsp dried chili flakes
  • 1 tbsp sesame seeds
  • Fresh cilantro for garnish
  • Optional: 1 avocado, cut into cubes

Instructions

  1. Gently smash the cucumber pieces with the side of a knife (this gives them more texture and the ability to soak up the dressing
  2. Whisk all dressing ingredients except the sesame seeds in the bottom of a medium bowl.
  3. Add the cucumbers and toss them together. (add more soy sauce if needed)
  4. Top with the sesame seeds. Enjoy!
