Description

This easy strawberry spinach salad has fresh spinach, sliced strawberries, creamy goat cheese and crunchy walnuts tossed in a homemade honey balsamic dressing. It’s ready in 10 minutes.

Ingredients

Units

For the Salad:

  • 6 cups fresh spinach
  • 1 1/2 cups fresh strawberries, sliced
  • 1/4 small red onion, thinly sliced
  • 1/2 cup goat cheese, crumbled
  • 1/2 cup walnuts, chopped

For the Dressing:

  • 1/4 cup balsamic vinegar
  • 1/3 cup extra virgin olive oil
  • 1 tablespoon Dijon mustard
  • 1 tablespoon honey
  • 1/4 teaspoon salt
  • Freshly ground black pepper, to taste

Instructions

  1. Wash and dry the spinach and strawberries. Slice the strawberries and crumble the goat cheese.
  2. In a small bowl, whisk together the balsamic vinegar, olive oil, Dijon mustard, honey, salt, and black pepper.
  3. In a large salad bowl, combine the spinach, strawberries, red onion, goat cheese, and walnuts.
  4. Drizzle the dressing over the salad and toss gently to combine.
  5. Serve immediately and enjoy!

Notes

Swaps: Use arugula or mixed greens instead of spinach, feta instead of goat cheese, and pecans, almonds or pumpkin seeds instead of walnuts. Add grilled chicken, cooked quinoa or avocado to make it a meal.

Storage: Dress only what you’ll eat right away. Keep leftover dressing in a sealed jar in the fridge for up to 5 days and shake before using.
