Pico de gallo is a classic side dish that goes with just about anything. We love it on tacos, nachos, or as a simple snack with tortilla chips.

  • 1/2 white onion, diced (about 1 cup diced onion)
  • 3 tablespoons fresh lime juice (1-2 limes)
  • 1 jalapeno pepper, membrane removed and deseeded, minced
  • 1/2 cup cilantro, chopped
  • 3 medium tomatoes or 1 pint cherry tomatoes, (about 2 cups diced tomatoes)
  • 1/2 teaspoon salt + more to taste

  1. Dice the onion then add it to a medium mixing bowl, then squeeze in lime juice and stir to coat. Set aside to soak in the lime juice while you chop the rest of the ingredients.
  2. Dice the tomatoes, chop the cilantro, and mince the jalapeno. Add to the bowl with a big pinch of salt and stir to combine.
  3. Cover and refrigerate for at least an hour to allow the flavors to come together.
