Description

Nothing says summer like watermelon! And nothing goes better with watermelon than mint, which means watermelon mint popsicles are the best summer treat!


Ingredients

Units Scale
  • 45 cups of chopped (about 2 inches) seedless watermelon pieces (organic if possible)
  • about 10 medium fresh mint leaves
  • 2 tablespoons of raw honey (local if possible)
  • 1.5 tablespoons of fresh lime juice (about the juice of 1 lime)

Instructions

Blend all ingredients in a blender until smooth, about 30 seconds.

Pour into BPA-free popsicle molds and freeze for at least 6 hours. I find it’s best to freeze them overnight. Run the popsicle mold under lukewarm water for about 30 seconds and the frozen popsicle will slide right out.

Watermelon mint popsicles will keep in the freezer for a few months if needed, but mine are usually gone within the week.
