Ingredients

  • 1 pint strawberries, stemmed and cut in half (or in quarters if they are large)
  • 2 Cuties oranges or tangerines, peeled and separated
  • 1 kiwi, peeled, sliced, then quartered to make triangles
  • 1 cup cubed pineapple
  • 1 apple, cored and cubed
  • 1 cup red grapes
  • 1 cup blueberries (or berry of your choice)
  • 810 mint leaves, chopped

For the dressing

  • 3 tablespoons fresh lemon juice (about 2 lemons; substitute lime or orange, if desired)
  • 1/4 cup honey or maple syrup (more or less to taste)
  • 1/4 teaspoon vanilla extract

Instructions

  1. In a large serving bowl, whisk the citrus juice, honey, and vanilla until combined; it helps to gently warm your honey by setting its container in a bowl of hot water to make it easy to whisk.
  2. Add the cut fruit and chopped mint and gently toss to coat.

Notes

This salad can be stored in the refrigerator for up to 3 days after making.
