- 1 pint strawberries, stemmed and cut in half (or in quarters if they are large)
- 2 Cuties oranges or tangerines, peeled and separated
- 1 kiwi, peeled, sliced, then quartered to make triangles
- 1 cup cubed pineapple
- 1 apple, cored and cubed
- 1 cup red grapes
- 1 cup blueberries (or berry of your choice)
- 8–10 mint leaves, chopped
For the dressing
- 3 tablespoons fresh lemon juice (about 2 lemons; substitute lime or orange, if desired)
- 1/4 cup honey or maple syrup (more or less to taste)
- 1/4 teaspoon vanilla extract
Instructions
- In a large serving bowl, whisk the citrus juice, honey, and vanilla until combined; it helps to gently warm your honey by setting its container in a bowl of hot water to make it easy to whisk.
- Add the cut fruit and chopped mint and gently toss to coat.
Notes
This salad can be stored in the refrigerator for up to 3 days after making.
