- 1/2 cup unsalted butter, at room temperature
- 1 cup granulated sugar (option to sub brown sugar or coconut sugar)
- 2 large eggs
- 2 teaspoons vanilla extract
- 1 1/2 cups all-purpose flour (or gluten-free all-purpose flour)
- 3/4 teaspoon baking soda
- 1/2 teaspoon fine-grain sea salt or Kosher salt
- Optional: 1 teaspoon ground cinnamon
- Optional Additions: 1 cup add-ins, such as walnut pieces and/or chocolate chips
Instructions
- Preheat the oven to 350°F (177°C). Grease a standard 9×5-inch loaf pan and add a strip of parchment paper for easy removal, if desired.
- Mash the Bananas: In a large mixing bowl, mash the bananas with a fork or hand mixer.
- Mix Wet Ingredients: Add the softened butter, sugar, vanilla, and cinnamon (if using) to the bananas. Mix well.
- Add Dry Ingredients: Add the flour, then sprinkle in the salt and baking powder. Gently mix until just combined (avoid over-mixing). Fold in any optional mix-ins.
