Description

Chocolate chip pancakes are a classic breakfast favorite and this recipe has only seven ingredients and is ready in 20 minutes or less.


Ingredients

  • 2 cups all-purpose flour or 1:1 gluten-free flour
  • 2 teaspoons baking powder
  • 1/4 teaspoon sea salt
  • 1 tablespoon sugar, optional
  • 2 eggs
  • 1 3/4 cups milk
  • 2 tablespoons melted butter + more for cooking
  • 1/2 cup milk chocolate chips
  • Whipped cream or coconut whipped cream, for topping

 


Instructions

  1. In a bowl, mix flour, baking powder, salt, and sugar.
  2. In a separate bowl, beat eggs into milk then stir in 2 tablespoons melted butter (not too hot).
  3. Gently stir this mixture into the dry ingredients, but don’t overmix. 
  4. Heat a large skillet over medium-low heat and lightly grease with butter.
  5. Ladle your batter onto your skillet in any size you’d like.
  6. While batter is still moist in the skillet, sprinkle in a few chocolate chips while it cooks.
  7. Flip after bubbles rise to surface and bottom browns. Repeat with next pancakes.
  8. Serve with whipped cream and maple syrup.
