This delicious brown rice salad bowl (aka Self-Care Salad) is the perfect way to get some much-needed vitamins and minerals while still enjoying a tasty meal. Plus, it’s super easy to make!


Units Scale
  • 1 cup brown rice, pre-cooked and cooled
  • 2 cups kale, chopped
  • 1 cup broccoli, cut into florets and sliced
  • 1 avocado, cubed
  • 1 cucumber, sliced and quartered
  • 1/2 cup red cabbage, thinly sliced
  • 1/4 cup toasted walnuts
  • 1/4 cup roasted beets, cubed
  • 1/8 cup fresh cilantro, roughly chopped

Lemon Olive Oil Dressing:

  • 1/4 cup lemon juice
  • 1 teaspoon Dijon mustard
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon honey
  • 1/4 cup olive oil
  • 1 teaspoon apple cider vinegar


  1. Place all salad ingredients in a large bowl and toss.
  2. Combine salad dressing in a jar with a lid and shake until combined.
  3. Toss dressing with salad
  4. Serve and enjoy!
