Description

This health-boosting Avocado Salad is delicious and simple to make. Creamy avocado, crisp cucumber, sweet yellow tomatoes, and red onion are tossed in a bright lime and olive oil dressing with just a touch of honey and garlic. 


Ingredients

Units
  • 2 ripe avocados, pitted and diced
  • 1 English cucumber, sliced into half-moons
  • 1 1/2 cups yellow cherry tomatoes, halved
  • 1/4 cup thinly sliced red onion
  • 1/4 cup fresh cilantro, chopped, divided

For the Dressing

  • 2 tablespoons fresh lime juice
  • 3 tablespoons extra-virgin olive oil
  • 1 teaspoon honey
  • 1 small garlic clove, grated or minced
  • 1/2 teaspoon sea salt
  • Freshly ground black pepper, to taste

Instructions

  1. In a large bowl, combine the avocados, cucumber, yellow tomatoes, red onion, and most of the cilantro, reserving a small amount for garnish.
  2. In a small bowl or jar, whisk together the lime juice, olive oil, honey, garlic, salt, and pepper.
  3. Drizzle the dressing over the salad and gently toss to combine, being careful not to mash the avocado. Garnish with the remaining cilantro, season to taste, and serve immediately.

Notes

Fresh lemon juice or your favorite vinegar can be used in place of lime.

Substitute fresh parsley for cilantro if preferred.
