Spicy Black Bean Tacos With Healthy Avocado Cream Sauce

Black bean tacos might just be my favorite dinner to make – they’re super delicious and really healthy when made with sprouted corn tortillas and my Healthy Avocado Cream Sauce. They can be garnished any way you’d like, I like to put a few options out in small bowls and let everyone build their own.

This recipe can easily be doubled and both the taco filling and Healthy Avocado Cream Sauce can be kept in the fridge in airtight containers for up to 3 days.

I always use the Healthy Avocado Cream Sauce (below) instead of sour cream – for this recipe and others – it’s healthy and guilt-free!

Spicy Black Bean Tacos With Healthy Avocado Cream Sauce

Total Time: 30 min
Serves 2-4

Ingredients:

  • 1 tbsp extra virgin olive oil
  • 1 small or ½ large yellow onion, finely chopped
  • 1 medium poblano pepper, fine to medium chopped
  • 1 15oz can organic black beans, drained and rinsed
  • 1-2 cloves garlic, finely chopped, grated, or pressed
  • ½ tsp chili powder (your choice of brand)
  • 1 tsp ground cumin
  • ½ tsp Cholula Hot Sauce (or your favorite vinegar based hot sauce)
  • 1 tsp sea salt
  • ½ tsp ground black pepper
  • 1 package sprouted corn tortillas

For garnish:

  • Shredded cabbage or mixed greens, your choice
  • Chopped fresh cilantro
  • 1 lime, cut into wedges
  • Grape tomatoes, halved
  • Fresh Salsa
  • Plain greek yogurt (instead of sour cream)
  • Sliced avocado
  • Chopped fresh jalapeño

Taco Filling Recipe:
Heat the olive oil in a saute pan over medium heat; add the onions, poblano peppers & a pinch of salt; saute until softened, about 5 minutes. Add the garlic, chili powder and cumin, saute another 2 minutes until very fragrant. Add the drained and rinsed black beans, hot sauce, salt, pepper, and 1-2 tbsp purified water; reduce heat to medium low, cover and cook 10-15 minutes, stirring occasionally until the beans are heated through and flavors combine.

Build your tacos to your preference, my favorite is a sprouted corn tortilla, 3 tbsp of the black bean taco filling, shredded cabbage, tomatoes, and 1 tbsp Healthy Avocado Cream Sauce.

If you like very mild tacos, use red bell pepper instead of the poblano and a very mild chili powder. Poblanos don’t have a lot of heat, but if you’re super sensitive to any heat use the bell pepper. And if you want it extra spicy, add a fresh chopped jalapeño to the taco filling the same time you add the poblano.

Healthy Avocado Cream Sauce
Total Time: 5 min
Makes about 1 cup

Tastes just like sour cream!

Ingredients:

  • ½ cup plain greek yogurt
  • ½ large ripe avocado, seed removed and peeled
  • 1 tsp fresh lime juice
  • ½ tsp pure water
  • 1 pinch sea salt

Recipe:
Place all ingredients in a blender and blend until creamy (a Vitamix blender makes it super creamy). Or, place all ingredients in a bowl and blend with an immersion blender until creamy.

Use it anywhere you’d normally use sour cream. Can be stored in the refrigerator in an airtight container up to 3 days.
