Spicy Pomegranate Ginger Smoothie Recipe (small)

Hot damn this drink is pretty!

Even better, it’s as good for you as it is beautiful.

I’m in love with both the pomegranate jewel tone and spicy kick from the ginger. Enjoy this vegan smoothie any time of day to indulge in a healthy treat.

Spicy Pomegranate Ginger Smoothie Recipe

Serves 1

Ingredients:

  • seeds + juice from one pomegranate
  • 1 large apple, core cut away
  • 1/4 of an avocado
  • 1/2 inch knob of fresh ginger, peeled
  • 1/2 cup unsweetened almond milk (or nut milk of your choice)
  • 1/2 cup purified water
  • handful of ice

Method: Blend all ingredients in a high speed blender until smooth. Enjoy immediately.

Optional: Add a large handful of fresh baby spinach with the rest of the ingredients. It will turn the color of the smoothie slightly brownish but add a ton of good nutrition – you can’t even taste it.

To seed and juice the pomegranate:

Firmly roll the pomegranate on the counter with the palm of your hand for about 20 seconds. Roll hard enough to break up the seeds (you’ll hear them), but not so hard that you break the fruit open. Place a strainer above a large bowl and slice the fruit in half; juice will start spilling out immediately. Rolling the pomegranate loosens the seeds, so gently squeeze each half, cut side down, through the strainer. The strainer will catch the seeds and the juice will fall into the bowl. The pith (white part) should stay with the shell, if it doesn’t you can simply pick it out. If there is a lot, place the seeds in a large bowl of room temperature water. The seeds will sink and the pith will float for easy separation.
